Ingredients

  • 1 lb mushrooms, cleaned and sliced
  • 5 Tbsp flour
  • 1 can beef broth
  • 1 thick slice onion
  • 2 small bay leaves
  • 1/2 tsp basil
  • 1/4 tsp pepper
  • 1/2 tsp salt

Instructions

  1. Heat butter in a pan and sauté mushrooms until light brown. Strain out mushrooms and set aside.
  2. Heat the cooking liquid; add flour and cook until thickened.
  3. Gradually stir in beef broth until blended.
  4. Add onion, bay leaves, basil, salt, and pepper.
  5. Cook until the mixture is thickened.
  6. Reduce heat and add half and half.
  7. Cook on low for 15 minutes.
  8. Strain the soup.
  9. Add the cooked mushrooms back to the broth.
  10. Heat the soup and serve.
