Ingredients

  • 2 lb. ground beef
  • 1 small can green chilies, chopped
  • 1 can Ro-Tel tomatoes, diced
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 small onion, chopped
  • 3 cans biscuits

Instructions

  1. Cook ground beef, chopped onions, and chopped green chilies until meat is browned and onions are translucent.
  2. Drain off excess fat from the meat mixture.
  3. Add cream of mushroom soup, cream of chicken soup, and diced Ro-Tel tomatoes to the meat mixture. Stir to combine.
  4. Flatten the biscuit dough and place each biscuit in a sprayed cupcake pan.
  5. Spoon the meat mixture into each biscuit cup.
  6. Optional: top with cheese before baking.
  7. Bake at 375°F until biscuits are golden brown, about 20-25 minutes.
