Beef Ribs with Mango
Ingredients
- 6 lbs short rib of beef, rubbed with beef rub ⓘ
- 2 teaspoons paprika ⓘ
- 2 teaspoons thyme ⓘ
- 2 teaspoons basil ⓘ
- 2 teaspoons rosemary ⓘ
- 2 teaspoons parsley ⓘ
- 2 teaspoons black pepper ⓘ
- 1 onion, chopped ⓘ
- 1 carrot, chopped ⓘ
- 1 head caramelized garlic ⓘ
- 1 cup mango, chopped ⓘ
- 2 green onions ⓘ
- 1 cup barbecue sauce ⓘ
- 2 cups chicken broth ⓘ
Instructions
- Preheat grill or braising pan.
- Brown beef ribs on all sides.
- In a preheated saucepan, combine onion, garlic, mango, carrot, green onions, BBQ sauce and broth.
- Simmer the ribs in this mixture 2 hours or until fork tender.
