Beef Ribs with Mango

Ingredients

  • 6 lbs short rib of beef, rubbed with beef rub
  • 2 teaspoons paprika
  • 2 teaspoons thyme
  • 2 teaspoons basil
  • 2 teaspoons rosemary
  • 2 teaspoons parsley
  • 2 teaspoons black pepper
  • 1 onion, chopped
  • 1 carrot, chopped
  • 1 head caramelized garlic
  • 1 cup mango, chopped
  • 2 green onions
  • 1 cup barbecue sauce
  • 2 cups chicken broth

Instructions

  1. Preheat grill or braising pan.
  2. Brown beef ribs on all sides.
  3. In a preheated saucepan, combine onion, garlic, mango, carrot, green onions, BBQ sauce and broth.
  4. Simmer the ribs in this mixture 2 hours or until fork tender.
