Ingredients

  • 1/2 lb. ground beef
  • 1/2 c. chopped onion
  • 2 Tbsp. oil or shortening
  • 1 (16 oz.) can red kidney beans
  • 1/2 c. bottled all-purpose barbecue sauce
  • 1/2 tsp. salt
  • 1 1/2 c. water
  • 1 c. Minute rice

Instructions

  1. Brown ground beef and chopped onion in oil or shortening.
  2. Add drained red kidney beans, barbecue sauce, and salt to the beef mixture.
  3. Cover and simmer for 30 minutes.
  4. Add water and uncooked Minute rice to the mixture.
  5. Bring to a boil; reduce heat, cover, and cook for 8 minutes or until rice is tender.
