Ingredients

  • 4 lb. chuck, round or rump
  • 1/4 cup butter
  • 2 lb. mushrooms, sliced
  • 1 small onion
  • 3 cloves
  • salt and pepper to taste
  • white wine or sour cream (optional)

Instructions

  1. In a large, heavy saucepan, melt the butter.
  2. Add the meat and brown on all sides.
  3. Peel the onion and stick cloves into it.
  4. Add the onion, sliced mushrooms, salt, and pepper to the pan.
  5. Cover tightly and simmer for 30 minutes per pound of meat.
  6. Check occasionally for moisture and add a little wine or water if needed.
  7. When the roast is tender, thicken the meat juices with sour cream or thin with wine if desired.
