Beef Rolls Cordon Bleu

Juicy ground beef patties filled with Swiss cheese and Canadian bacon, rolled and baked to perfection, then served with a savory mushroom sauce for a hearty meal.

Ingredients

  • 3 lb. ground beef
  • 1 tsp. salt
  • 1 tsp. dried vegetable flakes
  • 1 (8 oz.) pkg. sliced Swiss cheese, halved crosswise
  • 1 (6 oz.) pkg. sliced Canadian bacon
  • 2 eggs
  • 1 c. seasoned bread crumbs
  • 1/3 c. butter or margarine
  • 1 can condensed golden mushroom soup
  • 1 c. milk
  • 1 medium size tomato
  • 1/4 c. water

Instructions

  1. Mix ground beef lightly with salt and vegetable flakes in a large bowl.
  2. Shape the mixture into 8 patties about 1/4-inch thick.
  3. Place a slice of Swiss cheese and Canadian bacon on top of each patty.
  4. Roll up each patty jelly roll fashion to enclose the filling.
  5. Beat eggs in a shallow dish.
  6. Place seasoned bread crumbs in a separate shallow dish.
  7. Dip each beef roll in beaten eggs, then roll in bread crumbs to coat.
  8. In a large skillet, melt butter over medium heat.
  9. Cook the beef rolls until browned on all sides, about 15-20 minutes.
  10. In a saucepan, combine condensed golden mushroom soup, milk, and water.
  11. Heat and stir until smooth and heated through.
  12. Serve the beef rolls with the mushroom sauce and tomato wedges.
