  • 1 (16 oz.) can dark red kidney beans
  • 1 (13 3/4 oz.) can no-salt-added beef broth
  • 1 (8 oz.) can no-salt-added tomato sauce
  • 1 (4 oz.) can chopped green chiles

Instructions

  1. Cut tortillas into 1/2-inch-wide strips and then cut the strips in half crosswise.
  2. Place tortilla strips on an ungreased baking sheet and bake at 350°F for 12 to 15 minutes until crisp. Set aside.
  3. Coat a Dutch oven with cooking spray and heat over medium until hot.
  4. Add ground round, chopped onion, and minced garlic; cook until beef is browned, stirring to crumble.
  5. Drain beef mixture and pat dry with paper towels.
  6. Wipe drippings from the pan with a paper towel and return beef mixture to the pan.
  7. Add chili powder, ground cumin, dried oregano, salt, and pepper; stir well.
  8. Stir in chopped tomatoes, kidney beans, beef broth, tomato sauce, and chopped green chiles.
  9. Bring to a boil, cover, reduce heat, and simmer for 30 minutes, stirring occasionally.
  10. Ladle soup into individual bowls.
  11. Top each with shredded lettuce, chopped tomato, shredded cheese, and crispy tortilla strips.
