Beefeater Pie

Ingredients

  • 6 oz. package of croutons
  • 1/2 cup warm water
  • 2 eggs
  • 1 lb. ground beef
  • 1 chopped onion
  • 1 cup Cheddar or Monterey Jack cheese
  • 1/2 cup barbecue sauce or catsup
  • 6 or 8 thick slices of tomatoes

Instructions

  1. Add warm water to the croutons; mix and press into a buttered 10-inch pie plate to form the crust.
  2. Scramble the ground beef and chopped onion; drain off excess fat.
  3. Mix the cooked beef and onion with cheese, eggs, barbecue sauce or catsup, and a cup of croutons; press this mixture onto the crouton crust.
  4. Top the pie with sliced tomatoes.
  5. Bake at 400°F for 25 to 30 minutes.
  6. Top with cheese and bake for an additional 2 minutes.
