Ingredients

  • 1 lb. fish (fresh or salt water)
  • 1 lb. fresh peeled tomatoes
  • 2 small onions
  • 2 to 4 small potatoes
  • thyme
  • parsley
  • salt
  • pepper

Instructions

  1. Take about 1 pound of firm fresh or saltwater fish fillet and cut into small bite-sized pieces.
  2. Place the fish in a pot with 1 pound of fresh peeled tomatoes, cut into chunks.
  3. If fresh tomatoes are not available, canned tomatoes may be used.
  4. Add 2 small onions, halved and sliced, and 2 to 4 small peeled potatoes cut into small pieces.
  5. Season with thyme, parsley, salt, and pepper to taste.
  6. Simmer slowly for 4 to 6 hours.
  7. Carefully add sherry or rum, and season with pepper to taste before serving.
