- Take about 1 pound of firm fresh or saltwater fish fillet and cut into small bite-sized pieces.
- Place the fish in a pot with 1 pound of fresh peeled tomatoes, cut into chunks.
- If fresh tomatoes are not available, canned tomatoes may be used.
- Add 2 small onions, halved and sliced, and 2 to 4 small peeled potatoes cut into small pieces.
- Season with thyme, parsley, salt, and pepper to taste.
- Simmer slowly for 4 to 6 hours.
- Carefully add sherry or rum, and season with pepper to taste before serving.
