Ingredients

  • 16 to 20 oz. frozen tiny peas, thawed and drained
  • 8 oz. can shrimp, lobster, crab or imitation crab
  • 1 cup finely chopped celery
  • 3/4 cup mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon curry powder
  • garlic salt to taste
  • 1/2 cup unsalted cashews
  • 5 1/2 oz. can chow mein noodles

Instructions

  1. Combine thawed and drained tiny peas, canned seafood, and finely chopped celery in a large bowl.
  2. In a separate small bowl, mix mayonnaise, fresh lemon juice, curry powder, and garlic salt.
  3. Pour the dressing over the pea mixture and toss well.
  4. Cover and refrigerate for at least 30 minutes.
  5. Add cashews and chow mein noodles to the salad and toss again.
  6. Serve on lettuce leaves.
