A refreshing cucumber mold with lime-flavored gelatin, creamy cottage cheese, and crisp vegetables, perfect for light summer gatherings or as a unique appetizer.

Ingredients

  • 3 oz. lime flavored gelatin
  • 1 cup hot water
  • 1/2 cup finely chopped cucumbers
  • 1/3 cup finely chopped celery
  • 3/4 cup sour cream or plain yogurt, undrained
  • 1 cup small curd cottage cheese, undrained
  • 3 Tbsp. finely chopped onions

Instructions

  1. Dissolve the lime flavored gelatin in hot water.
  2. Refrigerate until it begins to set, then stir in the chopped cucumbers, chopped celery, chopped onions, sour cream, and cottage cheese.
  3. Pour the mixture into a 1-quart mold and refrigerate until fully set.
