Ingredients

  • 1 1/2 c. flour
  • 1/2 c. cornmeal
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 1/4 c. sugar
  • 1 1/2 c. milk
  • 1 egg
  • 1 tsp. oil in each cup

Instructions

  1. Sift together in a large bowl the flour, cornmeal, baking powder, salt, and sugar.
  2. Add the milk and egg and mix well until smooth.
  3. Heat muffin cups until the oil in each cup is hot.
  4. Pour the batter into the hot muffin cups.
  5. Bake at 350°F (175°C) for 15 minutes or until golden brown.
