Ingredients
- 3/4 cup milk ⓘ
- 2 teaspoons instant coffee powder ⓘ
- 3/4 cup unsweetened cocoa ⓘ
- 1/2 cup sour cream ⓘ
- 1 1/4 cups all purpose flour ⓘ
- 1 1/2 teaspoons baking soda ⓘ
- 1/2 teaspoon baking powder ⓘ
- Pinch salt ⓘ
- 1 cup butter, softened ⓘ
- 1 1/2 cups sugar ⓘ
- 3 large eggs, at room temperature ⓘ
- 2 teaspoons vanilla extract ⓘ
Instructions
- Preheat oven to 350°F. Grease three 8-inch cake pans, line bottoms with wax paper, then grease and flour the paper.
- Heat milk and coffee in a small saucepan until small bubbles form around the edge. Add to cocoa and whisk until smooth. Whisk in sour cream and let cool.
- In a medium bowl, combine flour, baking soda, baking powder, and salt.
- Beat butter in a mixer bowl until light. Gradually beat in sugar until light and fluffy.
- Beat in eggs, one at a time, then add vanilla extract.
- At low speed, gradually beat in dry ingredients alternately with the chocolate mixture, beginning and ending with dry ingredients.
- Beat at medium speed for 2 minutes.
- Pour batter into prepared pans.
- Bake for 25 minutes, until the top springs back when lightly touched.
- Cool in pans on wire racks for 10 minutes. Invert cakes onto racks, remove paper, and cool completely.
