Ingredients

  • 3 qt. popped popcorn
  • 1 cup brown sugar
  • 1 teaspoon vanilla
  • 1 cup peanuts (optional)
  • 1 stick margarine
  • 1/4 cup light corn syrup
  • 1/2 teaspoon baking soda

Instructions

  1. Spray a large paper bag with Pam and put the popped popcorn inside.
  2. In a bowl, mix the margarine, light corn syrup, and brown sugar.
  3. Heat the mixture in the microwave on high for 4 minutes.
  4. Add vanilla and baking soda; beat with a whisk until light and foamy.
  5. Pour the caramel mixture over the popcorn and shake the bag to coat evenly.
  6. Poke holes in the top of the bag with a fork, fold the top over, and close tightly.
  7. Microwave on high for 1 1/2 minutes, then remove and shake.
  8. Microwave again for 1 1/2 minutes, then remove and shake.
  9. Microwave for 30 seconds, then remove and shake.
  10. Microwave for an additional 30 seconds, then remove and shake.
  11. Carefully pour the caramel corn onto waxed paper and let it cool.
