Ingredients

  • 5 large eggs
  • 1/2 lb. butter
  • 1 c. white sugar
  • 1 3/4 c. flour
  • 1/2 tsp. baking powder
  • 3/4 lb. candied cherries
  • 1 lb. candied pineapple
  • 4 c. pecans
  • 1/2 oz. vanilla extract
  • 1/2 oz. lemon extract

Instructions

  1. Cream butter; add sugar.
  2. Cream well until fluffy.
  3. Add eggs, one at a time; mix well.
  4. Sift flour and baking powder together.
  5. Chop nuts and fruit and mix with some flour.
  6. Fold in flour mixture with butter mixture.
  7. Add vanilla and lemon extracts; mix well.
  8. Fold in nuts and fruit.
  9. Pour into greased, paper-lined tube cake pan.
  10. Place in cold oven and bake at 250°F for 3 hours or until done.
