A hearty vegetarian roast combining textured vegetable protein, rice, and nuts, flavored with mushrooms and herbs, perfect for family dinners and special occasions.

Ingredients

  • 1 (20 oz.) can vegeburger or Granburger, TVP rehydrated
  • 2 cups brown rice, cooked
  • 2 cups seasoned bread crumbs
  • 3 Egg Beaters or 6 egg whites
  • 2 tablespoons oil
  • 1 medium onion, chopped
  • 1 (4 to 8 oz.) can mushrooms, chopped
  • 1 tablespoon parsley flakes
  • 1/2 cup chopped nuts
  • 1 cup hot water with 1 heaping teaspoon Sovex
  • 1 tablespoon butter

Instructions

  1. Mix and pack all ingredients except the water-Sovex mixture and butter into well-oiled loaf pans.
  2. Pour hot water with Sovex and butter over the roast in the pans.
  3. Bake at 350°F for 1 to 1 1/2 hours.
