Company Roast
A hearty vegetarian roast combining textured vegetable protein, rice, and nuts, flavored with mushrooms and herbs, perfect for family dinners and special occasions.
Ingredients
- 1 (20 oz.) can vegeburger or Granburger, TVP rehydrated ⓘ
- 2 cups brown rice, cooked ⓘ
- 2 cups seasoned bread crumbs
- 3 Egg Beaters or 6 egg whites ⓘ
- 2 tablespoons oil
- 1 medium onion, chopped ⓘ
- 1 (4 to 8 oz.) can mushrooms, chopped
- 1 tablespoon parsley flakes ⓘ
- 1/2 cup chopped nuts ⓘ
- 1 cup hot water with 1 heaping teaspoon Sovex ⓘ
- 1 tablespoon butter ⓘ
Instructions
- Mix and pack all ingredients except the water-Sovex mixture and butter into well-oiled loaf pans.
- Pour hot water with Sovex and butter over the roast in the pans.
- Bake at 350°F for 1 to 1 1/2 hours.
