Ingredients

  • 1 cup sugar
  • 2 sticks margarine
  • 5 eggs
  • 1 3/4 cups flour
  • 1/2 oz vanilla flavoring
  • 1/2 oz lemon flavoring
  • 4 cups pecans
  • 16 oz cherries
  • 16 oz candied pineapple

Instructions

  1. Cream margarine and sugar until well blended.
  2. Add egg yolks one at a time, beating well after each addition.
  3. Add 1 1/4 cups flour and the vanilla and lemon flavorings; mix thoroughly.
  4. Set aside the batter.
  5. Mix 1/2 cup flour with pecans, cherries, and candied pineapple; stir to coat evenly.
  6. Beat egg whites until stiff peaks form.
  7. Gently fold the beaten egg whites into the batter.
  8. Pour the batter over the floured nuts and fruits, mixing gently.
  9. Grease and flour a Bundt pan.
  10. Pour the batter into the prepared pan.
  11. Bake in a cold oven at 250°F for 3 1/2 to 4 hours.
