Ingredients

  • 5 large eggs
  • 1/2 lb. butter or oleo
  • 1 cup white sugar
  • 1 3/4 cups flour
  • 1/2 teaspoon baking powder
  • 3/4 lb. candied cherries
  • 1 lb. candied pineapple
  • 4 cups pecans
  • 1/2 oz. vanilla flavoring
  • 1/2 oz. lemon flavoring
  • 1 cup coconut (optional)

Instructions

  1. Cream butter and sugar until fluffy.
  2. Beat eggs well and add to the mixture.
  3. Chop nuts and candied fruits; mix with part of the flour and fold into the batter.
  4. Sift remaining flour and baking powder together and fold into the mixture.
  5. Add vanilla and lemon flavorings and mix well.
  6. Pour batter into a greased and paper-lined tube pan or small loaf pans.
  7. Place in a cold oven and bake at 250°F (120°C) for 3 hours.
  8. Small loaves may be done in 2 1/2 hours.
  9. Allow to cool and store wrapped in a tin for up to two months.
