Ingredients

  • 2 c. diced potatoes
  • 1/2 c. sliced carrots
  • 1/2 c. sliced celery
  • 1/4 c. chopped onion
  • 1 (10 oz.) pkg. sharp Cheddar cheese, shredded
  • 2 c. cream-style corn
  • 1/4 c. margarine
  • 1/4 c. flour
  • 2 c. milk
  • 1 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 c. boiling water

Instructions

  1. Combine potatoes, carrots, onion, celery, salt and pepper; add water.
  2. Cover and simmer for 10 minutes; do not drain.
  3. Make a cream sauce with margarine, flour and milk.
  4. Add cheese; stir until melted.
  5. Add corn and undrained vegetables.
  6. Heat; do not boil.
  7. Serves 6 to 8.
