Ingredients

  • 5 c. cake flour
  • 1 lb. soft margarine
  • 2 c. sugar
  • 6 egg yolks
  • 1 tsp. soda
  • 1 Tbsp. water
  • 2 oz. lemon extract
  • 1/2 lb. chopped dates
  • 1 lb. white raisins
  • 1 qt. pecans
  • 8 qt. candied red cherries
  • 8 oz. candied green cherries
  • 8 oz. candied pineapple
  • 6 egg whites

Instructions

  1. Cream well together margarine and sugar.
  2. Add beaten egg yolks.
  3. Dissolve soda in water and add to the mixture.
  4. Add lemon extract and mix thoroughly.
  5. Set aside.
  6. In a large bowl, mix dates, raisins, pecans, and candied fruits with about one-quarter of the flour.
  7. Gradually add the remaining flour to the sugar and butter mixture, then fold in the fruit and nut mixture until thoroughly blended.
  8. Beat egg whites until stiff and fold into the batter.
  9. Spray a large tube pan with nonstick spray.
  10. Pour the batter into the prepared pan, ensuring it settles evenly.
  11. Bake at 275°F (135°C) for 3 hours until a wooden pick inserted in the center comes out clean.
