Ingredients

  • 1/2 cup shortening
  • 1/2 cup butter or margarine, softened
  • 2 cups sugar
  • 5 eggs, separated
  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 teaspoon vanilla
  • 2/3 cup flaked coconut
  • pinch of cream of tartar

Instructions

  1. Cream shortening, butter, and sugar until light and fluffy.
  2. Add egg yolks, one at a time, beating well after each addition.
  3. Combine flour, baking soda, and salt.
  4. Alternately add flour mixture and buttermilk to the creamed mixture, beginning and ending with flour.
  5. Stir in vanilla and flaked coconut.
  6. Beat egg whites with a pinch of cream of tartar until stiff.
  7. Fold egg whites into the batter gently.
  8. Spoon batter into 3 greased and floured 9-inch pans.
  9. Bake at 350°F (175°C) for 25 to 30 minutes.
