Ingredients

  • 1 egg
  • 1/4 cup flour
  • 1/4 cup milk (up to 1/2 cup)
  • a pinch of nutmeg
  • butter

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Beat the egg until well mixed.
  3. Add the flour and stir to combine.
  4. Gradually add milk, whisking until the batter is smooth.
  5. Melt butter in a shallow pan until bubbly, then pour the batter into the pan.
  6. Bake for 15 to 20 minutes, or until the popovers are golden and risen.
  7. If extra milk was used, lower the temperature to 350°F (175°C) after 10 minutes and continue baking until done.
  8. Serve hot, topped with maple syrup, powdered sugar, fruit, or jam.
