Ingredients

  • 3 1/3 cups flour
  • 1/2 teaspoon salt
  • 3 cups sugar
  • 2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 1 cup cooking oil
  • 1 (No. 303) can pumpkin (2 cups)
  • 1/2 cup white raisins
  • 1/2 cup nuts
  • 4 eggs
  • 1/3 cup water

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. In a large bowl, combine flour, salt, sugar, baking soda, and cinnamon.
  3. Add cooking oil, pumpkin, beaten eggs, water, vanilla, and mix well.
  4. Fold in chopped white raisins and nuts.
  5. Pour batter into prepared loaf pan.
  6. Bake for about 60 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow to cool before removing from the pan and slicing.
