Ingredients

  • 2 chickens, cut up
  • 5 cups rice
  • 1 cup Crisco oil
  • 5 onions, sliced
  • 2.5 cups yoghurt
  • 3 potatoes, boiled
  • 1 egg
  • 1 teaspoon corn flour
  • 1 teaspoon black pepper
  • 1 teaspoon cumin
  • 1 teaspoon dried coriander
  • 1 teaspoon cardamom

Instructions

  1. Wash the chicken, place it in a pot with water and salt, and cook for 40 minutes or until tender.
  2. Remove the chicken pieces and set aside.
  3. Beat the eggs and corn flour together, then mix in the yoghurt.
  4. Add the ground spices and 1/2 tablespoon of salt to the yoghurt mixture.
  5. In a separate pan, sauté the sliced onions in Crisco oil until golden, then remove from the oil.
  6. Layer the sautéed onions on top of the cooked chicken, then place the boiled potatoes over the chicken.
  7. Pour the yoghurt mixture over the potatoes and set aside.
  8. Pour 8 cups of the chicken broth into a large pot.
  9. Wash the rice and add it to the broth along with the oil used for frying onions.
  10. Cook until the rice absorbs all the liquid and is tender, about 20-25 minutes.
