Bombay Turkey
A flavorful Indian-inspired turkey dish with aromatic curry, cashews, and lemon peel, served over rice—perfect for a comforting and mildly spiced meal.
Ingredients
- 4 Tbsp. butter or margarine ⓘ
- 2 to 3 tsp. curry powder ⓘ
- 1/2 cup chopped onion ⓘ
- 3 Tbsp. all-purpose flour ⓘ
- 1/4 tsp. salt ⓘ
- dash of pepper ⓘ
- 1 1/2 cups chicken broth ⓘ
- 2 cups diced cooked turkey ⓘ
- 1 tsp. shredded lemon peel ⓘ
- 2/3 cup long grain rice ⓘ
- 1/4 cup chopped cashew nuts ⓘ
- 2 Tbsp. chopped canned pimiento ⓘ
Instructions
- In a medium skillet, melt the butter.
- Add curry powder and heat for 2 to 3 minutes.
- Stir in chopped onion and cook until tender but not brown.
- Blend in flour, salt, and pepper, stirring well.
- Add chicken broth all at once and cook, stirring, until boiling; cook for 2 minutes longer.
- Add cooked turkey and shredded lemon peel, then heat mixture to boiling.
- Cook rice according to package directions.
- Stir in chopped cashew nuts and chopped pimiento.
- Serve the turkey mixture over cooked rice.
