Ingredients

  • 4 Tbsp. butter or margarine
  • 2 to 3 tsp. curry powder
  • 1/2 cup chopped onion
  • 3 Tbsp. all-purpose flour
  • 1/4 tsp. salt
  • dash of pepper
  • 1 1/2 cups chicken broth
  • 2 cups diced cooked turkey
  • 1 tsp. shredded lemon peel
  • 2/3 cup long grain rice
  • 1/4 cup chopped cashew nuts
  • 2 Tbsp. chopped canned pimiento

Instructions

  1. In a medium skillet, melt the butter.
  2. Add curry powder and heat for 2 to 3 minutes.
  3. Stir in chopped onion and cook until tender but not brown.
  4. Blend in flour, salt, and pepper, stirring well.
  5. Add chicken broth all at once and cook, stirring, until boiling; cook for 2 minutes longer.
  6. Add cooked turkey and shredded lemon peel, then heat mixture to boiling.
  7. Cook rice according to package directions.
  8. Stir in chopped cashew nuts and chopped pimiento.
  9. Serve the turkey mixture over cooked rice.
