Crispy, buttery biscotti with a hint of almond and nuts, perfect for dipping in coffee or tea, ideal for breakfast or an afternoon snack.

Ingredients

  • 2 Tbsp. butter
  • 1 cup sugar
  • 1 egg
  • 3/4 tsp. almond extract
  • 2 1/4 cups flour
  • 1/8 tsp. salt
  • 1 3/4 tsp. baking powder
  • 1/4 cup nuts
  • 2 Tbsp. oil
  • 1 to 2 Tbsp. water

Instructions

  1. Cream butter and sugar together.
  2. Add egg and almond extract to the creamed mixture.
  3. Sift in flour, salt, and baking powder into the mixture.
  4. Add oil and water to the dough.
  5. Mix in nuts.
  6. Divide the stiff dough into 3 logs and place on an ungreased baking sheet.
  7. Bake at 350°F for 26 to 29 minutes until lightly browned.
  8. Remove from oven and slice diagonally into 3/8-inch pieces.
  9. Toast slices again if you prefer a crisp cookie.
