Ingredients

  • 15 oz black beans
  • 1 cup frozen corn
  • 1/2 cup chopped red pepper
  • 1/2 cup fresh chopped cilantro
  • 8 oz green onion
  • 3 Tbs lime juice
  • 2 Tbs balsamic vinegar
  • 1/4 tsp salt
  • 1/2 tsp cumin

Instructions

  1. Rinse and drain the black beans.
  2. Thaw and drain the frozen corn.
  3. Chop the red pepper and cilantro.
  4. Slice the green onions.
  5. In a bowl, combine black beans, corn, red pepper, cilantro, and green onions.
  6. Add lime juice, balsamic vinegar, salt, and cumin.
  7. Mix well and serve as a dip or a dressing over lettuce.
