Ingredients

  • 2 (10 oz.) cans mild enchilada sauce
  • 1 Tbsp. olive or vegetable oil
  • 1 onion, sliced
  • 1 small red bell pepper, sliced
  • 3 garlic cloves, minced
  • 1 (15 oz.) can black beans
  • 8 (6-inch) tortillas
  • 1 (8 oz.) pkg. Colby or Monterey Jack cheese

Instructions

  1. Preheat oven to 425°F.
  2. Spoon 2/3 cup of enchilada sauce in the bottom of an ungreased 12 x 8-inch baking dish.
  3. Heat oil in a skillet over medium heat.
  4. Add sliced onion, red bell pepper, and minced garlic to the skillet.
  5. Cook and stir for 2 to 3 minutes or until onions are tender.
  6. Combine the cooked onion mixture with the black beans.
  7. Spoon about 2 tablespoonfuls of the bean mixture into each tortilla.
  8. Top with 2 tablespoonfuls of cheese and roll up the tortillas.
  9. Place the rolled tortillas seam side down in the prepared baking dish.
  10. Spoon the remaining enchilada sauce over the top of the rolled tortillas.
  11. Top with the remaining cheese.
  12. Bake for 15 to 20 minutes until heated through and cheese is melted.
