Ingredients

  • 2 Tbsp. olive oil
  • 2 medium onions
  • 1 red bell pepper
  • 1 lb. Italian turkey sausage
  • 2 lb. ground turkey
  • 6 cloves garlic
  • 8 oz. diced green chiles
  • 1/2 tsp. pepper
  • 1 tsp. salt
  • 3 Tbsp. chili powder
  • 1 Tbsp. dried oregano
  • 1 Tbsp. dried basil
  • 12 oz. can tomato paste
  • 28 oz. can Italian plum tomatoes
  • 16 oz. can Italian plum tomatoes
  • 1 c. beer
  • 32 oz. can black beans

Instructions

  1. In a large skillet or Dutch oven, heat olive oil over low heat.
  2. Saute the chopped onions and red bell pepper for about 10 minutes or until tender but not browned.
  3. Add the Italian turkey sausage and ground turkey; cook until browned, then drain excess fat.
  4. Add minced garlic, diced green chiles, pepper, salt, chili powder, oregano, basil, and tomato paste; stir well.
  5. Mix in the diced tomatoes, beer, and rinsed black beans.
  6. Simmer over low heat for 20 to 30 minutes, stirring occasionally.
  7. Taste and adjust seasonings as needed.
  8. Stir in cilantro leaves before serving.
