Black Bean Turkey Chili

Ingredients
- 2 Tbsp. olive oil
- 2 medium onions ⓘ
- 1 red bell pepper ⓘ
- 1 lb. Italian turkey sausage ⓘ
- 2 lb. ground turkey ⓘ
- 6 cloves garlic
- 8 oz. diced green chiles ⓘ
- 1/2 tsp. pepper ⓘ
- 1 tsp. salt ⓘ
- 3 Tbsp. chili powder ⓘ
- 1 Tbsp. dried oregano ⓘ
- 1 Tbsp. dried basil ⓘ
- 12 oz. can tomato paste ⓘ
- 28 oz. can Italian plum tomatoes ⓘ
- 16 oz. can Italian plum tomatoes ⓘ
- 1 c. beer ⓘ
- 32 oz. can black beans ⓘ
Instructions
- In a large skillet or Dutch oven, heat olive oil over low heat.
- Saute the chopped onions and red bell pepper for about 10 minutes or until tender but not browned.
- Add the Italian turkey sausage and ground turkey; cook until browned, then drain excess fat.
- Add minced garlic, diced green chiles, pepper, salt, chili powder, oregano, basil, and tomato paste; stir well.
- Mix in the diced tomatoes, beer, and rinsed black beans.
- Simmer over low heat for 20 to 30 minutes, stirring occasionally.
- Taste and adjust seasonings as needed.
- Stir in cilantro leaves before serving.
