Ingredients

  • 12 oz. unsweetened chocolate
  • 3 sticks unsalted butter
  • 3 1/2 cups light brown sugar
  • 2 1/2 cups cake flour
  • 4 1/2 teaspoons baking soda
  • 4 eggs
  • 1 1/4 teaspoons vanilla
  • 8 oz. container sour cream
  • 2 1/4 cups boiling water

Instructions

  1. Preheat oven to 350°F.
  2. Grease and flour desired cake pans. Melt chocolate over very low heat; set aside and cool.
  3. Place butter and brown sugar in a large mixing bowl and beat until fluffy on high speed.
  4. Sift flour and baking soda into a second bowl.
  5. Mix eggs and vanilla in a third bowl until blended, then beat into butter mixture just until well blended.
  6. Beat for 1 minute on medium speed.
  7. Add cooled chocolate to butter mixture, beating on medium speed for 1 minute.
  8. Scrape the bowl.
  9. Beat in half of the flour on low speed until blended.
  10. Then beat at high speed for 20 seconds more.
  11. Mix in sour cream until blended.
  12. Add remaining flour and mix until blended.
  13. Add boiling water, mixing on low speed just until blended.
  14. Pour batter into prepared pans.
  15. Bake at 350°F for 25 minutes or until cake starts to shrink from the sides of the pan.
  16. Cool in pans for 10 minutes, then remove from pans and cool completely before frosting.
