  • 2 1/2 cups cider vinegar
  • 2 1/2 cups cold water
  • 2 1/2 cups sugar
  • 4 teaspoons pickling salt

Instructions

  1. Core, seed, and chop red peppers medium-coarse.
  2. Peel and chop onions medium-coarse.
  3. Peel, core, and chop apples medium-coarse.
  4. Place vegetables and apples in a large enamel or stainless steel pot. Pour in just enough boiling water to cover.
  5. Let stand for 15 minutes.
  6. Meanwhile, combine vinegar, cold water, sugar, and pickling salt in a medium-sized enamel pan.
  7. Bring to a boil; stir to dissolve sugar. Lower heat, simmer uncovered for 5 minutes.
  8. Drain the vegetable-apple mixture well.
  9. Return the drained mixture to the same pot.
  10. Pour in the vinegar mixture.
  11. Bring to a full, rolling boil.
  12. Pour into pint jars after cooking thoroughly, then seal (about 20 to 30 minutes).
  13. Eat on hot dogs, hamburgers, or green beans.
