Ingredients

  • 4 Tbsp. butter, softened
  • 3/4 c. sugar
  • 2 eggs, separated
  • 2 tsp. lemon rind
  • 1/2 tsp. vanilla extract
  • 1 1/2 c. flour
  • 1 c. blueberries
  • 1 tsp. baking powder
  • 1/2 c. sour cream

Instructions

  1. Cream the softened butter.
  2. Gradually add sugar and beat until fluffy.
  3. Add 2 egg yolks, lemon rind, and vanilla extract, then beat.
  4. Sift remaining flour with baking powder.
  5. Mix 2 tablespoons of flour with blueberries.
  6. Add the flour mixture to the batter, alternating with sour cream, beginning and ending with flour.
  7. Beat the 2 egg whites until stiff.
  8. Stir in one-third of the egg whites into the batter.
  9. Gently fold in the remaining egg whites.
  10. Fold in the floured blueberries.
  11. Pour the batter into a loaf pan.
  12. Sprinkle with 1 teaspoon of sugar on top.
  13. Bake at 350°F for 50 minutes or until a toothpick inserted in the center comes out clean.
