Ingredients

  • 1 3/4 cups all-purpose flour
  • 1/3 cup sugar
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh or frozen blueberries, thawed
  • 3/4 cup milk
  • 1 egg
  • 1/3 cup melted butter or margarine

Instructions

  1. In a bowl, combine flour, sugar, baking powder, and salt.
  2. Add blueberries, milk, melted butter, and egg to the dry ingredients.
  3. Mix until the dry ingredients are just moistened; do not overbeat.
  4. Spoon batter into paper-lined microwave-safe baking or cupcake pan, filling no more than 2/3 full.
  5. Microwave on Medium-high power for 3 minutes. Let rest for 3 minutes.
  6. Microwave on High power for 2 to 3 minutes or until muffins are done.
  7. Let the muffins rest in the pan for a couple of minutes before serving.
