Ingredients

  • 2 eggs
  • 2 Tbsp tapioca
  • 3/4 cup dark brown sugar
  • pinch of salt
  • 1/4 tsp nutmeg
  • 2 lb ripe peaches, peeled and sliced
  • 1 cup blueberries
  • pastry for two 9-inch pie crusts
  • 2 Tbsp cream

Instructions

  1. Preheat oven to 450°F (232°C).
  2. In a large mixing bowl, beat eggs until frothy and well combined.
  3. Add tapioca and allow to absorb the liquid for 2 minutes.
  4. Beat in dark brown sugar, salt, and nutmeg.
  5. Add peeled and sliced peaches and blueberries to the mixture, stirring gently to combine.
  6. Pour the filling into one of the prepared 9-inch pie crusts.
  7. Cover with the second pie crust and trim excess dough.
  8. Spread 2 tablespoons of cream over the top crust before baking.
  9. Bake in the preheated oven for 45 minutes or until crust is golden brown and filling is bubbly.
  10. Allow to cool slightly before serving.
