Ingredients

  • 2 cups flour
  • 1 egg
  • 1 cube butter
  • 1 cup buttermilk
  • 2 boxes frozen blueberries
  • 1 cup sugar
  • 1 cup water
  • 4 Tbsp cornstarch
  • 2 Tbsp butter

Instructions

  1. Melt the butter.
  2. Stir in the flour, egg, and buttermilk to form the batter.
  3. Drop large spoonfuls of batter onto a cookie sheet.
  4. Bake at 400°F for about 10 to 15 minutes or until lightly browned.
  5. Allow to cool.
  6. Prepare blueberry sauce by cooking frozen blueberries with water, sugar, and cornstarch until thickened, then fold into blueberries.
  7. Serve the shortcake topped with the blueberry mixture.
