Ingredients

  • 1/4 lb. butter
  • 3 Tbsp. finely chopped yellow onion
  • 3 Tbsp. finely chopped carrot
  • 3 Tbsp. finely chopped celery
  • 2 1/2 c. canned Italian tomatoes with juice
  • 2 tsp. salt
  • 1/4 tsp. granulated sugar
  • 1/2 c. heavy cream

Instructions

  1. Put all the ingredients except the heavy cream in a saucepan and cook at the merest simmer for 1 hour, uncovered.
  2. Stir from time to time with a wooden spoon.
  3. Puree the contents of the pan through a food mill into a saucepan and bring to a simmer, stirring with a wooden spoon.
  4. Add the heavy cream and stir.
  5. Cook for 1 minute more.
  6. Taste and correct for salt.
  7. Serve immediately over pasta.
