Ingredients

  • 1 pkg. yellow or white cake mix
  • 1/4 cup oil
  • 1 1/2 cups water
  • 2 cups coconut
  • 2 eggs

Instructions

  1. Mix the cake mix, oil, eggs, water, cream of coconut, and coconut together.
  2. Pour the batter into a greased 9 x 13-inch pan and bake at 350°F for 35 minutes.
  3. While warm, poke holes in the cake to allow the coconut cream to soak in.
  4. Pour remaining cream of coconut over the warm cake and let it cool.
  5. Stir in 1 cup of coconut and fold into Cool Whip.
  6. Spread the coconut mixture over the cooled cake to ice it.
  7. Refrigerate the cake before serving.
