  • 2 Tbsp. olive oil
  • spices to taste: cayenne pepper, chili powder, curry powder
  • 1 1/2 c. raw bulgur

Instructions

  1. Saute garlic, green onions, peppers, and bulgur in olive oil until onions are soft and bulgur is coated with oil.
  2. Add spices, diced tomatoes, and beans.
  3. Cover and bring to a low boil.

Tips & Substitutions

For a twist on flavor, consider adding a squeeze of lemon juice or chopped fresh herbs like cilantro or parsley. If you don't have bulgur, quinoa or couscous can be used as substitutes. Adjust the spices to your taste; for a milder dish, reduce the cayenne pepper. This dish is versatile and can easily fit into Mediterranean recipes.

Serving Suggestions

Serve Bodacious Bulgar warm as a hearty main dish or as a side. It pairs beautifully with a refreshing Dilled Cucumber And Tomato Salad or can be served alongside grilled meats for a complete meal. For a vegan option, enjoy it with a side of Garbanzo And Black Olive Salad for added protein and flavor.

Storage & Reheating

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, add a splash of water or broth to prevent drying out and warm on the stovetop or in the microwave. This dish also tastes great cold, making it a perfect option for meal prep.
