Ingredients

  • 1/2 lb. butter or margarine
  • 1/2 lb. brown sugar
  • 3/4 lb. mixed fruit
  • 1 lb. self-rising flour
  • 2 large eggs
  • 1 tsp. mixed spice
  • 1/4 lb. chopped almonds or walnuts
  • 1/4 lb. cherries
  • pinch of salt
  • 1/4 lb. mixed peel
  • 1/2 pt. water

Instructions

  1. Put water in a saucepan. Add butter, sugar, and fruit. Boil for 3 minutes. Allow to cool slightly.
  2. Place flour, salt, chopped almonds or walnuts, mixed peel, mixed spice, cherries, and remaining ingredients in a mixing bowl.
  3. Add the cooled mixture and whipped eggs to the dry ingredients in the bowl.
  4. Mix thoroughly until well combined.
  5. Place the batter in a 9-inch tin.
  6. Bake for 1½ to 2 hours at 300°F (150°C).
