Bolognese Calzone

Ingredients

  • 1 tbsp olive oil
  • 1 None onion, chopped
  • 1 clove garlic, minced
  • 1 lb ground beef
  • 3.5 oz mushrooms, chopped
  • 2 tbsp tomato paste
  • 1 (13.5 oz) can chopped tomatoes
  • 1/2 cup red wine
  • 1/4 cup fresh parsley, chopped
  • 2 1/4 cups self-rising flour, sifted
  • 2 1/2 tbsp butter
  • 1/2 cup milk or buttermilk
  • 3 oz mozzarella cheese, grated
  • 1 None egg, beaten
  • None None salad, to serve

Instructions

  1. For the bolognese sauce, heat oil in a frying pan over high heat. Saute onion and garlic for 5 mins, stirring constantly. Add ground beef and brown well. Add mushrooms and tomato paste. Cook, stirring, for 1 min. Add tomatoes and red wine. Season. Simmer for 15-20 mins. Add 2 tbsp parsley. Reserve 1 cup. Freeze remainder for another dish.
  2. Preheat oven to 400°F. Line 2 baking trays with parchment paper.
  3. Place flour in a large bowl. Cut in butter until mixture resembles coarse crumbs. Add milk and 1/2 cup water and quickly mix to a soft, sticky dough. Turn out onto a floured surface and knead lightly. Shape into 8 thin discs.
  4. Distribute Bolognese sauce over 1/2 of each disc. Sprinkle with cheese and remaining parsley. Fold dough over and press edges to seal. Place on prepared trays, brush with egg and bake for 10-12 mins.
  5. Serve with salad.
