Ingredients
- 1 Tbsp. olive oil ⓘ
- 1 1/2 c. red bell pepper strips ⓘ
- 2 c. chopped cooked chicken ⓘ
- 1 Tbsp. minced garlic
- 1 tsp. chopped fresh oregano ⓘ
- 1 can diced tomatoes with Italian herbs ⓘ
- 2 c. hot cooked ziti or penne pasta ⓘ
- 1/2 tsp. black pepper ⓘ
- 1/4 c. thinly sliced fresh basil ⓘ
- 1/4 c. fresh grated Parmesan cheese ⓘ
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add red bell pepper strips and sauté for 4 minutes.
- Add diced tomatoes with Italian herbs; reduce heat and simmer for 10 minutes, stirring occasionally.
- Add cooked chicken, pasta, and black pepper; stir well to combine.
- Divide about 1 1/2 cups of the pasta mixture into each of 4 bowls.
- Top each with sliced fresh basil and grated Parmesan cheese.
- Serve with Caesar salad and bread.
