Borsch(Meatless)
Ingredients
- 1 c. carrots, grated ⓘ
- 1 c. celery, diced ⓘ
- 2 c. beets, grated ⓘ
- 1 c. cabbage, shredded ⓘ
- 1/2 c. fresh or dried mushrooms ⓘ
- 2 medium onions, chopped fine ⓘ
- 10 grains whole pepper ⓘ
- 2 bay leaves ⓘ
- 6 1/2 c. water ⓘ
- 2 c. tomato sauce ⓘ
- 2 Tbsp. cooking oil ⓘ
- salt to taste ⓘ
- dill weed to taste ⓘ
- 1 Tbsp. lemon juice ⓘ
Instructions
- Grate carrots and beets on medium size grater.
- Add diced celery, one chopped onion, salt and cold water and simmer for 1/2 hour.
- Fry chopped onion in oil until light in color.
- Add cabbage and mushrooms.
- Simmer until all vegetables are tender, but firm. Add tomato sauce, seasonings and lemon juice.
