Ingredients

  • 4 Tbsp. olive oil
  • 2 lb. caribou, in 1-inch cubes
  • 1 c. flour
  • 1 pt. fresh pearl onions, peeled
  • 3 cloves garlic, minced
  • 1 1/2 lb. fresh tomatoes, peeled and seeded
  • 1 Tbsp. fresh thyme, minced
  • 1 tsp. dried thyme
  • 1 Tbsp. oregano
  • 1 tsp. rosemary
  • 1 bay leaf
  • 1 tsp. ground cumin
  • 1 1/2 c. beef broth

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Dredge caribou cubes in flour and brown them in the hot oil until golden on all sides.
  3. Add peeled pearl onions and minced garlic to the pot; cook until fragrant.
  4. Stir in peeled and seeded tomatoes, fresh thyme, oregano, rosemary, bay leaf, and ground cumin.
  5. Pour in beef broth and red wine, bringing the mixture to a boil.
  6. Reduce heat to low, cover, and let simmer for about 1 hour and 30 minutes until the meat is tender.
  7. Remove bay leaf before serving. Adjust seasoning as needed.
