Ingredients
- 4 Tbsp. olive oil ⓘ
- 2 lb. caribou, in 1-inch cubes ⓘ
- 1 c. flour ⓘ
- 1 pt. fresh pearl onions, peeled ⓘ
- 3 cloves garlic, minced ⓘ
- 1 1/2 lb. fresh tomatoes, peeled and seeded ⓘ
- 1 Tbsp. fresh thyme, minced ⓘ
- 1 tsp. dried thyme ⓘ
- 1 Tbsp. oregano
- 1 tsp. rosemary ⓘ
- 1 bay leaf ⓘ
- 1 tsp. ground cumin ⓘ
- 1 1/2 c. beef broth ⓘ
Instructions
- Heat olive oil in a large pot over medium heat.
- Dredge caribou cubes in flour and brown them in the hot oil until golden on all sides.
- Add peeled pearl onions and minced garlic to the pot; cook until fragrant.
- Stir in peeled and seeded tomatoes, fresh thyme, oregano, rosemary, bay leaf, and ground cumin.
- Pour in beef broth and red wine, bringing the mixture to a boil.
- Reduce heat to low, cover, and let simmer for about 1 hour and 30 minutes until the meat is tender.
- Remove bay leaf before serving. Adjust seasoning as needed.
