A hearty bean stew combining tender kidney beans, sweet carrots, and melted Monterey Jack cheese, perfect for comforting dinners and suitable for a variety of flavor profiles.

Ingredients

  • 1 lb. red kidney beans
  • 2 1/2 c. chopped onion
  • 6 carrots, cut in 1-inch pieces
  • 1 lb. Monterey Jack cheese, cubed
  • 12 oz. tomato paste
  • 1 1/2 tsp. garlic salt
  • 3 1/2 tsp. chili powder
  • 1 Tbsp. salt
  • 1/4 tsp. pepper

Instructions

  1. Rinse the red kidney beans.
  2. Cover the beans with water and boil for 2 minutes.
  3. Let the beans stand for 1 hour, then simmer, covered, for 50 minutes until tender.
  4. Add all the ingredients except the cheese to the pot.
  5. Simmer for 30 minutes until the carrots are done.
  6. Stir in the cubed Monterey Jack cheese just before serving.
