Ingredients

  • 1 lb. ground beef
  • 1 c. chopped onions
  • 1 c. chopped green pepper
  • 1 (14 1/2 to 16 oz.) can tomatoes
  • 1 Tbsp. salt
  • 1 Tbsp. chili powder
  • 1/2 tsp. garlic powder
  • 3 c. cooked rice
  • 4 c. shredded cabbage
  • 1/2 c. sour cream
  • 1 c. grated Monterey Jack cheese

Instructions

  1. Saute ground beef, chopped onions, and chopped green pepper until cooked.
  2. Stir in canned tomatoes, salt, chili powder, garlic powder, cooked rice, and shredded cabbage.
  3. Cover and cook for 10 to 15 minutes or until cabbage is tender.
  4. Stir in sour cream.
  5. Sprinkle with grated Monterey Jack cheese.
  6. Cover for 2 to 3 minutes to melt the cheese.
