Ingredients

  • 1 red cabbage (about 1 lb.)
  • 2 Tbsp. vegetable oil
  • 1/2 c. coarsely chopped onion
  • 1 apple, peeled, cored and cut in thin slices
  • 1/2 c. fresh or canned chicken broth
  • 1 Tbsp. red wine vinegar
  • 2 Tbsp. honey or brown sugar
  • 2 Tbsp. butter
  • salt and pepper to taste

Instructions

  1. Discard any tough or wilted leaves from the cabbage and core. Julienne the cabbage.
  2. Heat oil in a heavy frypan.
  3. Add the onion and cabbage and cook until wilted.
  4. Add the apple, broth, vinegar, honey or sugar, salt, and pepper.
  5. Blend well.
  6. Cover and cook for 15 minutes, stirring often.
  7. Add the butter.
  8. Stir and blend well before serving.
