Ingredients

  • 4 to 5 lb boneless sirloin tip or round
  • 1/3 cup Dijon style mustard
  • 1 teaspoon dried crumbled rosemary
  • 1 teaspoon freshly ground pepper
  • 1/2 cup red wine, heated
  • 2 large carrots, chopped
  • 2 medium onions, cut in rings

Instructions

  1. Spread Dijon mustard over the meat.
  2. Sprinkle dried crumbled rosemary and freshly ground pepper over the meat.
  3. Place the meat on a rack, fat side up, in a heavy pan with a tight lid.
  4. Put the pan in a 450°F oven, uncovered, to brown the meat.
  5. Remove the pan from the oven and turn the meat using tongs (do not use a fork).
  6. Pour the heated red wine over the meat.
  7. Add chopped carrots and onion rings around the meat.
  8. Cover the pan with a lid.
  9. Reduce the oven temperature to 350°F and cook for 3 hours or until the meat is tender.
  10. During the last hour, add more red wine if needed for tenderness.
  11. When done, optionally add cooked gravy mix before serving.
