Ingredients

  • 6 to 8 large potatoes
  • 1 cup hot milk
  • 6 tablespoons melted butter or margarine
  • 1 1/2 teaspoons salt
  • 2 or 3 tablespoons flour
  • 1/8 teaspoon pepper
  • 3 eggs
  • 1 small onion

Instructions

  1. Pare and grate the potatoes.
  2. Combine the grated potatoes with hot milk, melted butter, salt, flour, pepper, beaten eggs, and grated onion. Mix well until blended.
  3. Grease a shallow baking pan (about 7 x 12 inches).
  4. Pour the mixture into the prepared pan, spreading evenly.
  5. Bake in a preheated oven at 350°F for 1 hour and 15 minutes, or until well set.
  6. For an extra crust, place the pan under the broiler for 3 to 5 minutes until golden.
