Ingredients

  • 1 cup All-Bran
  • 1 cup boiling water
  • 1/2 cup oil
  • 2 cups All-Bran
  • 2 eggs
  • 1 1/2 cups sugar
  • 2 cups buttermilk
  • 2 1/2 cups flour
  • 2 1/2 teaspoons baking soda

Instructions

  1. Mix 1 cup All-Bran and 1 cup boiling water in a bowl; let cool.
  2. Add 1/2 cup oil to the cooled mixture and stir well.
  3. Measure 2 cups All-Bran and set aside for later.
  4. In a separate bowl, combine 2 eggs, 1 1/2 cups sugar, 2 cups buttermilk, 2 1/2 cups flour, and 2 1/2 teaspoons baking soda.
  5. Add the wet ingredients to the cooled All-Bran mixture and stir until combined.
  6. Fold in the remaining 2 cups All-Bran by hand.
  7. Cover the mixture and refrigerate for several hours or overnight.
  8. Spray muffin tins with cooking spray or line with paper liners.
  9. Spoon the batter into muffin tins.
  10. Bake at 400°F (200°C) for 15 to 20 minutes, until golden brown and a toothpick inserted in the center comes out clean.
