- Mix 1 cup All-Bran and 1 cup boiling water in a bowl; let cool.
- Add 1/2 cup oil to the cooled mixture and stir well.
- Measure 2 cups All-Bran and set aside for later.
- In a separate bowl, combine 2 eggs, 1 1/2 cups sugar, 2 cups buttermilk, 2 1/2 cups flour, and 2 1/2 teaspoons baking soda.
- Add the wet ingredients to the cooled All-Bran mixture and stir until combined.
- Fold in the remaining 2 cups All-Bran by hand.
- Cover the mixture and refrigerate for several hours or overnight.
- Spray muffin tins with cooking spray or line with paper liners.
- Spoon the batter into muffin tins.
- Bake at 400°F (200°C) for 15 to 20 minutes, until golden brown and a toothpick inserted in the center comes out clean.
