Bread Dumplings

Bread dumplings are soft, hearty, and flavorful, perfect as a comforting side dish or main course, with tender bread, onions, herbs, and a delicate fluffy texture.

Ingredients

  • 3 Tbsp. finely chopped onion
  • 3 Tbsp. butter
  • 2 rolls or 4 slices bread
  • 2 eggs
  • 3/4 c. milk
  • 1 Tbsp. snipped parsley
  • 3/4 tsp. salt
  • 2 1/2 c. all-purpose flour
  • 2 quarts water

Instructions

  1. Cook and stir chopped onion in butter until tender.
  2. Cut bread into 1/2 inch cubes, about 3 1/2 cups.
  3. Add bread cubes to the onion mixture and cook until golden brown.
  4. Cool the bread and onion mixture.
  5. Mix eggs, milk, parsley, and salt in a large bowl.
  6. Add the cooled onion-bread mixture to the egg mixture.
  7. Let stand until the bread is thoroughly moistened, about 10 minutes.
  8. Stir in enough flour to make a soft, slightly sticky dough.
  9. Heat water to boiling in a Dutch oven.
  10. Shape the mixture into 1 1/2 inch balls.
  11. Dip hands in cold water periodically to prevent sticking.
  12. Carefully place the dumplings into boiling water.
  13. Simmer uncovered until the dumplings rise to the surface, about 2 to 4 minutes.
  14. Stir occasionally to prevent sticking.
  15. Continue to simmer uncovered for an additional 5 to 9 minutes.
  16. Remove the dumplings with a slotted spoon.
